What’s better than starting your day with a cup of coffee? Answer: having coffee pancakes with that cup of coffee. On my trip to Vancouver I bought bacon-flavored maple syrup as a souvenir and I couldn’t wait to try it when I got home. I decided to whip up some pancakes to enjoy the syrup with, and my love for – or rather my addiction to – coffee resulted in my new favorite way to eat pancakes. So I grabbed my cheap instant coffee that I keep saved in my cupboard for baking, turned to Google for a basic pancake recipe, and here are the results!
1 cup all-purpose flour
3/4 cup milk
1 tbs. sugar
2 tbs. vegetable oil
1 tbs. baking powder
1 tsp. salt
1 1/2 tbs. instant coffee
Get ready because the steps are really complicated…
- Mix together all ingredients. I suggest crushing the instant coffee with a spoon so it is powdery before adding it in.
- Spoon batter onto pan and cook on stove.
An optional step (and highly recommended) is to sprinkle in chocolate chips into the batter. It adds sweetness and makes the pancakes extra tasty!
I can confidently say that these pancakes were a success! There was a nice taste of coffee flavor and the semi-sweet chocolate chips added just the right amount of sweetness. Oh, and the bacon-flavored maple syrup? Well, it tasted exactly like bacon mixed with maple syrup. It was a great purchase.
